A creamy one-pot pasta dish with mushrooms, spinach, and Parmesan cheese. Rich and satisfying comfort food made in one pot.

Instructions

  1. Add olive oil & garlic to Le Creuset Oval French oven & sauté for 2-3 minutes over medium-high heat.
  2. Add in mushrooms, chicken stock, white wine, salt & black pepper. Stir to evenly season.
  3. Add heavy cream to the pot and stir. Adjust heat to high and bring to a boil.
  4. Once boiled, add pasta. Constantly stir the pot.
  5. Add spinach to the pasta and stir until the spinach cooks down.
  6. Add in Parmesan cheese and mix together. Cook pasta for 10-12 minutes or until pasta is cooked to your liking.
  7. If using cooked chicken, add it in the last few minutes to heat through.
  8. Garnish with freshly grated Parmesan cheese & black pepper. Enjoy!

📝 Recipe Notes

MODIFICATION TIP: Can use ½ the pasta and add cooked chicken for a heartier protein dish. Original recipe may be a bit salty, so consider reducing salt to taste. Works great with various pasta shapes. Combined recipe from pages 157-158.
