Ingredients
- 1½ pounds ground veal
- ½ cup unsalted butter or margarine
- 1 tablespoon lemon juice

- ⅛ teaspoon ground nutmeg
- Dash ground black pepper
- 1 large egg
- 2 tablespoons water
- ½ cup fine, dry unseasoned breadcrumbs
- 2 tablespoons olive oil for frying
- Burger buns for serving
Instructions
- Gather the ingredients.
- In a large bowl, combine ground veal, butter, lemon juice, salt, nutmeg, and pepper. Mix well until thoroughly combined.
- Shape the mixture into 6 veal patties.
- In a shallow dish, beat together egg and water to create an egg wash.
- Dip each patty into the egg wash, then coat thoroughly with breadcrumbs, pressing coating firmly into the meat.
- Heat olive oil in a heavy skillet over medium heat. Brown coated veal patties on both sides (about 6-8 minutes per side), then reduce heat and cook for 15 minutes total, or until veal patties are done and reach internal temperature of 160°F.
- Serve as is with potatoes or other side dishes, or as burgers in buns with desired toppings.
